Detailed Description
The Fujian Province of China is the birthplace for the semi-oxidized Oolong teas. Oolong teas, aka wulong or black dragon, are made from large leaves that are produced in the late Spring. Unlike other types of tea that contain the top leaves and the buds of the bush, oolong teas are large well formed leaves that will sometimes also contain the stem of the bush. Oolongs differ from green, black and white teas by the method of processing and are the most labor intensive tea to produce. Each type of Oolong varies in the percentage of oxidation and the method in which it is processed (some are twisted, tippy leaves, some are cut, some are rolled into small balls).

Taiwan teas are world famous for their exquisite taste and exceptional quality. Surprisingly tea cultivation was late in coming to Taiwan as records show that this began only in the mid 19th century. Owing to the close proximity to some of the famous tea growing areas in China, Taiwan excels at producing high quality traditional style Oolong teas. Taiwan's geography varies from mountainous areas to low lying coastal regions. The sharp rise in altitudes and the surrounding seas provide Taiwan with diverse weather patterns and soil conditions, which contribute to the unique tasting teas found here.

Grown on the mist shrouded hills of the Tung Ting (Dong Ding) Mountains, in Nantou County in central Taiwan, at an elevation of 2500 feet, is one of the most famous Oolong teas. Tung Ting, which means Frozen Summit, was originally procured from tea plants in the Wuyi Mountains in China's Fujian Province.

The deep green, well-rolled leaves brew to large, well-formed emerald green leaves with a fresh garden aroma, a pale green liquor and a light, refreshing taste. Full flavor is reached when the leaves completely unfurl.

Brew tea at 185º - steep for 2 minutes. Try multiple infusions (let the tea steep for approximately 15 seconds longer on each subsequent infusion).

My First Oolong 3/16/2018
Generally, I like flavored teas. However, I decided to try this oolong with its fascinating history. I am very happy that I branched out with my tea selection. The oolong is rolled, not as tightly as a jasmine Pearl, but there are many leaves in each nugget. Therefore, fewer of them can be used to brew a cup. I examined one after brewing and it contained four fully intact leaves that were a lovely green color and over an inch in length. The flavor is that of a very soothing, light to medium true tea flavor. There is no diluted taste, nor is it acidic. It should appeal to a wide audience of tea lovers as either a hot or cold beverage. Simply tea at its finest.

One of my favorites 1/7/2018
I'm very happy to have found this tea. I have been exploring oolongs recently and SVtea's Tung Ting is a keeper. Many talk about it, but few deliver so consistently the buttery, creamy flavors with overtones of pear like this tea does. Capable of multiple steeps, this is a very light, and refreshing, yet rich and comforting tea. Perfect throughout the afternoon. And at a very reasonable price point from my experience. Do try!

...of a classic region. This is an excellent example of the Tung Ting region of Taiwan and their wonderful Oolong teas. If you are interested in an easy-drinking introduction to the intriguing world of Oolong teas, this is the perfect place to start!

The ultimate oolong 3/1/2013
This oolong, Tung Ting, is my antidote to the worst days at work, in the middle of the week. It is a break from everything that is wrong with this lunatic asylum of the time we live in.
 
Light and refreshing 3/26/2012
This was one of my first teas I tasted from Simpson and Vail. It was delightful the first time as it is every time. I like the faint aroma and bouquet to go along with a delicate paler color than some other Oolongs with a taste that is real soothing and refreshing.
