It is a key ingredient in Indian cooking and chai masala blends, and is used in Turkey brewed with coffee. Cardamom has a strong, unique taste, with an intensely aromatic fragrance. It is used in baking as well as medicinally. |
For Turkish coffee:
Grind whole pods with coffee beans and brew (preferably in a French Press). This brew is traditionally served heavily sweetened.
20 green cardamom pods
2 Tbsp orange peel
2 Tbsp cinnamon chips
1 Tbsp allspice
1 ½ tsp whole cloves
½ tsp ginger root
Combine dried spices in a tea infuser and add to simmering wine or apple cider. Simmer for approximately 20 minutes, then remove spices and serve.
