Thursday Cottage is not just a cosy, made-up name on a jam-pot - it's a real cottage where their delicious range of jams, marmalades and curds were first produced.
Curds are a particularly English concoction of fruit, sugar, eggs (fresh pasteurized free range) and pure country butter.
The mixture is gently cooked in a double-boiler to create a range of rich, creamy confections. They are delicious on bread, toast or scones and useful for making puddings.
Berry, Curd & Cream Dream Dessert
8 oz. whipping cream
1 jar lemon curd
berries of choice (I prefer blueberries with lemon curd!)
Whip the cream. Fold the curd into the cream. Layer in parfait glasses or margarita glasses alternating with berries. Add chocolate shavings on top. Refrigerate. Makes 4 servings
