Mangoes are from the Mangifera genus of trees. They originated in India, but are now found in many tropical climates. This fruit is high in Vitamin A and C as well as potassium and copper and is a great source of fiber.
These dried mango pieces can be reconstituted. To reconstitute, use hot water and soak mangoes for approximately an hour. If cold water is used, soak the fruit for 3-4 hours or overnight.
Black Bean & Mango Salsa:
Ingredients:
1 cup dried mango pieces
1 cup boiling water
1 can (15oz) black beans
1 cup corn
2 tomatoes, seeded and chopped
1/3 cup red onion, chopped
¼ cup cilantro, fresh, minced
1 jalapeno pepper, seeded and finely chopped
3 Tbsp Lime juice
½ tsp salt
¼ tsp ground cumin
Rehydrate the mango - Place the dried mango pieces in a bowl and pour boiling water over them and let it sit for 30 minutes. Strain the mangoes and add together with all the other ingredients in a bowl. Refrigerate for 1-2 hours to allow the flavors to integrate thoroughly.
