(Taraxacum officinale) A perennial plant found almost everywhere, dandelion is considered a weed by many gardeners. The plant, however, does have several culinary and medicinal uses and is regarded by many herbalists to be one of the best overall tonics. A tea made from the leaves of the Dandelion plant has been used for its powerful diuretic properties and for nervousness. The leaves are high in vitamins and minerals and can be drunk as a tea or the raw leaves are an excellent addition to salads.
Brew 2 tsp. in 1 cup water at 212º - steep for 10 minutes.
