(Cocos nucifera) Coconut is the fruit from a large palm tree that is grown throughout the tropics. High in saturated fat, coconuts are also low in sugar and high in minerals. Dried, grated coconut can be used in a variety of culinary recipes. It can be eaten alone or sprinkled over cereal or fruit and is a tasty addition to granola, curries, vegetable dishes, salads, baked goods, and smoothies. Desiccated coconut is coconut meat that has been shredded and dried to remove as much moisture as possible.
Granola with Coconut
Ingredients:
3 cups old-fashioned rolled oats
1 cup sliced almonds
½ cup desiccated coconut
½ cup sunflower seeds
¼ cup green pumpkin seeds
¼ cup sesame seeds
2 tsp ground cinnamon
½ cup maple syrup
¼ cup canola oil
1 tsp vanilla extract
Preparation:
Preheat the oven to 350°. Blend all dry ingredients in a large bowl. In a separate bowl or large mixing cup, whisk together the syrup, oil and vanilla. Add the wet ingredients to the dry and stir well. Spread the granola on an ungreased cookie sheet and bake for 15 minutes. Remove the granola from the oven and stir to insure even baking. Return to the oven for another 10 minutes. Cool and enjoy!
