China Lin Yun White Downy Tea |
These very long, twisted, tippy, gray and smoky-green leaves produce a tea with long olive-green leaves and a very pale, bright cup. China Lin Yun White Downy is mild, with a very delicate taste.
Brew: 2 tsp tea in 8 oz. water (at 175°), steep for 4 minutes.
Blueberry Muffins with White Tea
2 cups Unbleached All-Purpose Flour
½ cup sugar
½ tsp salt
1 Tbsp baking powder
¼ tsp nutmeg
¼ tsp cinnamon
1 ½ cup fresh blueberries
1 cup milk
2 Tbsp China Lin Yun White Downy Tea
¼ cup vegetable oil
2 large eggs
Preheat your oven to 400°F.
Blend together the dry ingredients. Add the blueberries and stir until coated with the dry mixture.
Place ½ cup milk and the white tea in the microwave for 25 seconds. Remove, cover and let steep for 5 minutes. Strain and discard the tea leaves. Add the remaining ½ cup milk and beat with the oil and eggs -- until they are light.
Pour the wet ingredients into the dry ingredients. Take a fork or wire whisk and blend the two for only 20 seconds. Resist whisking longer or your muffins will not be light and tender!
Fill cups of a lightly greased muffin tin three-quarters full. Place muffins in the oven and bake for 15 to 20 minutes, or until muffins test done.
