(Bixa orellana) Originating in South America, Annatto is now grown in many parts of the world. Annatto is an evergreen tree which produces a red fruit that contains these red seeds. These seeds have a scent that is slightly peppery with a touch of nutmeg and a flavor that is slightly sweet and peppery. In addition to the many recipes it is used in, annatto seed is classified as a food and color additive and it is used to tint cheese, butter, and margarine. It has been used to dye clothing and used in body paints.
